  • Dried lavender flowers - Dried lavender is actually really easy to purchase online (affiliate link). If you want to use fresh instead, feel free, but you will need about 3 times as much as you would need to use of dried. The flavor of lavender increases as it gets dried, so keep this in mind and don't over-do it.
  • Butterfly pea flowers - Dried butterfly pea flowers are also quite easy to find online! You will find this amazing ingredient in teas, as it creates an incredible array of hues from blue to pink. The color changes when anything acidic (like lemon) or alkaline (like cucumber). We used the butterfly pea flowers mostly for the color component, and it's optional.
  • Allulose - You may have noticed if you have seen our other recipes, that allulose is one of our most favorite sugar free sweeteners, in moderation. Eating a lot of it at once is known to create gastric distress in some people (like Bri actually) so go easy! For things like simple syrup, it's perfect, as it acts like sugar, tastes like sugar, and won't crystallize when it get's cold.
  • Water - This is simply to create the simple syrup.
  • Fresh lemon juice - Lavender and lemon are just a match made in heaven. When the acidic lemon juice hits your simple syrup, it will change a lovely light purple-ish pink hue when it reacts with the butterfly pea flowers. This co*cktail is truly delicate and beautiful, in both flavor, and its looks!
  • Vodka - Use your favorite vodka here. Just watch out for anything flavored as it might have added sugar. We find plain vodka works best. If you don't love vodka, you could always use your favorite spirit. Basically anything really neutral flavored will be perfect.
  • Ice - For the co*cktail shaker.
  • Lemon slices - For garnish, optional.

Making a lavender martini is super simple, just follow these steps!

  • We will start by preparing the sugar free lavender simple syrup. Boil 1 cup of water in a saucepan. Once boiling, add in 1 and ⅓ cup allulose, about 10 dried butterfly pea flowers (optional) and1.5 tablespoons dried lavender buds. Add a few drops of lemon juice to activate the purple color in the butterfly pea flower if using. Remove from heat.
  • Do not continue to heat the mixture, as this will create a bitter taste. Allow to steep for 20 minutes. After 20 minutes, strain lavender buds and butterfly pea flowers. What is the best way to incorporate lavender flavor into this drink?

Lavender is one of those herbs that can easily become way too strong, way too quick. When in doubt, just use a little less if you're nervous about it. Lavender can easily be overpowering.

For this lavender martini, we are going to make an infusion into our simple syrup to get that flavor, without the bitterness. We have tried eating dried lavender whole and it's just so pungent, and bitter. In general, we like to infuse dried lavender so that it doesn't become overwhelming.

If you use fresh instead of dried, you will need to use quite a lot more, as the flavor is much more delicate. We've had a hard time finding lavender fresh however, so we usually just opt for dried. No matter what you use, whether it be dried or fresh, make sure to use the purple flower part only!

What are butterfly pea flowers?

Butterfly pea flowers are such fun ingredients to use, and they have a very subtle, earthy flavor, similar to green tea. Apparently, butterfly pea flowers are said to be mood enhancers when made into tea or steeped, like in our sugar free lavender simple syrup.

Initially, we used butterfly pea flowers to create an incredible purple hue that we weren't getting from the lavender flowers alone. When combining butterfly pea flowers with lemon juce Plus, we knew the flavors would complement each other. You definitely don't have to use butterfly pea flowers if you don't have any, but if you can get your hands on some, we highly recommend it!

When made into tea, butterfly pea flowers are said to have stress reducing effects that help lower anxiety levels. It's also know to help "kickstart" the brain, increase energy and stamina, and help encourage a good mood and productivity. You can read more about the benefits here.

How to sweeten the lavender martini

The main element of this lavender martini that sweetens, as well as adds flavor, is the sugar free simple syrup. In general, sugar free simple syrup is incredibly easy to make, and we highly suggest usingallulose. You could of course simply use regular sugar if you don't have any dietary restrictions.

You could use whatever sweetener you like, but we find that allulose doesn’t crystalize like other (non sugar) sweeteners do. Just be aware that if you use sweeteners aside from allulose, it may crystalize after a few hours, so you may have to warm it up before using it in a co*cktail.

A good general rule of thumb for making this simple syrup is using about ⅓ cup more sweetener to 1 part water, since allulose is slightly less sweet than regular sugar.

We advise sweetening this to taste! If the drink isn't sweet enough to your liking, add more simple syrup as desired. Here's the recipe for our sugar free lavender simple syrup!

  • 1 oz sugar free lavender simple syrup

Instructions

  • Prepare your lavender simple syrup first, and allow it to cool completely before adding it to your co*cktail.
