My 312th recipe, "Candied Cherry Cookie", an eggless, soft, melt-in-your mouth cookie topped with a candied cherry. An fool proof recipe, which even a beginner can bake and impress your friends and family.

Candied cherry was one of my favorites while growing up. It sure must be for most of the kids around. The bright red color of the candied cherry along with the sugar syrup was more than enough to hook me up as a kid. While I hadn't tasted fresh cherries then, candied cherry was readily available in small transparent packages. Whenever my mom went to the supermarket, she would surely get me a packet. However, slowly with growing up, I somehow lost the touch with those candied cherry packets. The only real time I got to enjoy it was while eating a black forrest cake with the candied cherry on top.

After I started blogging, I started frequenting the supermarkets quite often to purchase ingredients for my recipes. I tend to be always on the lookout for ingredients which I love. Since Candied cherry is a childhood favorite, I was hunting for the same for a while. The closest match I could get here is Maraschino Cherry. The bright red cherry preserved in some kind of a syrup which has it very unique flavor. The flavor for sure is not one of my favorites. Hence I rarely purchase Maraschino cherry here. The only time I purchased it was when I made the Eggless Black Forrest cake.

When I was shopping this weekend, I was looking through all the colorful Christmas goodies section at the supermarket. And suddenly to my surprise I saw a jar of candied cherries. It looked more like the ones from my childhood. I purchased it so joyfully even without thinking about what I can make with it.

Since it is the Holiday season and the perfect time for baking, I decided to bake some delicious cookie using the cherry. I did not want to make a cherry cookie, where in the the cherry is mixed into the batter and lost while baking. Instead I wanted to bake a cherry cookie which would make the candied cherry as the star. Something which is bright and colorful perfect for the Christmas Holidays. And something which tastes as delicious as it looks.

This Candied Cherry Cookie is the perfect cookie for the holidays. They are so colorful and gorgeous with the piece of candied cherry sitting right on top like a crown jewel. And the most important aspect of this Candied Cherry cookie, is that it is so easy to make. Literally anyone, irrespective of whether you have prior baking experience or not, can make this. You don't also have the worry of waiting until the dough is refrigerated before baking. All you have to do is to mix up the dough and bake it right away. And you have a batch of warm cookies in a short span of time. And unlike a regular sugar cookie, this one is very soft, moist and literally melts in your mouth 🙂

Candied Cherry Cookie is an eggless, easy to make Christmas, melt in your mouth cookie recipe with a candied cherry baked on top.

Ingredients

  • 1 Cup Butter (softened, at room temperature)
  • ½ Cup Sugar
  • 1 tsp Oil (Sunflower / Canola)
  • 2 Tbsp Water
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • 1 tsp Vanilla Extract - 1
  • 2 ¼ Cups All Purpose Flour

Instructions

  • First, add the softened butter and sugar to a mixing bowl. Using a hand whisk, beat the butter until light and fluffy.

  • Meanwhile, in a separate bowl, add the oil, water and baking powder and mix well. Add this mixture to the butter. Also, add the vanilla extract and salt. Use the hand whisk until all the ingredients have mixed well and the mixture is light and fluffy.

  • Now, add the flour little by little and mix well until the dough is ready. You can use the hand whisk at the beginning and as you add more and more flour, you can switch to a ladle/spoon.

  • Cut the candied cherry into halves and keep aside.

  • Preheat the oven to 350 F. Now take about 1 ¼ Tbsp of the dough and roll it into a smooth ball using your palm. Place it on a greased baking pan. Leave a space of about 1 inch between each cookie dough. Gently press on top of the cookie dough with your finger to get a depression.

  • Place one half of the candied cherry on top of the cookie and gently press.

  • Bake in the pre heated oven for about 10 - 12 mins, until done. Remove the cookies from the oven and leave them to cool to room temperature.

Notes | FAQ

- Adjust the baking time based on the size of cookies you end up with.

- Cookies will look undercooked immediately after pulling out of the oven. The cookies will harden once cooled.

    Hi Revithi, thank you for the recipe. I want to make this for my 1 yr old daughter who is allergic to nuts n eggs. Is it possible to blend in some whole wheat flour (chapatti atta) to make it little easier to digest. If yes, in what proportion shld I mix it with all purpose flour.,

      Hi Apra, You can safely replace 25% of the maida with whole wheat flour without much of a change in end result. However you should do just fine replacing 100% maida with whole wheat flavor. The cookie texture will differ. It might not end up as light and crumbly. But the taste will not vary a lot.
