Avocado Baked Eggs is one of our favorite breakfast meals. Add-in a bit of bacon, cheese or roasted red peppers to make them your own.

You can also add-in ham, Parmesan, and even leftover taco meat (don’t judge, it's delicious). The fabulous part of this recipe is that you can set the oven timer and walk away. You can finish getting ready, get another cup of coffee, or check your Instagramfor lunch ideas. (I know I’m not the only one looking at #tacostacostacos at 8am.)

*The key is to give the center of the avocado a bit of a scoop-out, especially if you’re using large eggs. Check out the video where I show you how it’s done.

Add-ins for Avocado Baked with Eggs:

You can add almost anything to these Avocado Baked Eggs! The easiest method is to place the wet add-ins (like roasted peppers) in the avocado prior to adding the egg. Cheese, crumbed bacon or green onions on top. That can also give you a moment to decide if the well is overfull. Our favorite add-ins are:

  • Oven Baked Bacon or Ham
  • Roasted Red Peppers
  • Feta, Parmesan or Sharp Cheddar
  • Caramelized Onions
  • Sautéed Spinach

In addition to being an easy-to-prep breakfast, Avocado Baked Eggs are fabulous for a brunch/lunch crowd. You can prep ahead of time & just pop them in the oven. Plus, since they are gluten-free, Paleo-friendly & hold heat awhile, they make almost everyone happy.

Serving Avocado Baked Eggs for Brunch:

If you're having a family meal or hosting a group, Avocado Baked Eggs are a fabulous choice. Pair them with micro-greens and Oven-Baked Bacon for a next-level brunch board that's gorgeous and super-tasty. Serve with salsa and hot sauce for topping the eggs, and Bloody Caesars or DIY Bellinis, depending on your crowd. You can use the extra avocado you scooped for guacamole or a batch of my friend Kate's Tomatillo Avocado Salsa. If you don't know everyone's preferences, make a few without bacon so you have something for everyone.

Avocado Baked Eggs is one of my favorite breakfast meals – I usually top them with a bit of bacon or roasted red peppers.

Ingredients

  • 1 avocado
  • 2 slices cooked bacon crumbled, or other add-ins
  • 2 eggs
  • kosher salt & cracked black pepper
  • hot sauce optional

Instructions

  • Preheat the oven to 425 degrees F

  • Cut the avocado in half and scoop out the avocado so the hole matches the size of your eggs. If you don’t do this, the eggs will spill out as they cook and make a total mess. Place each avocado half directly on a cookie sheet, or in a small bowl or ramekin on top of a cookie sheet.

  • Crack an egg into each half of the avocado, sprinkle salt and pepper. Add the crumbed bacon (or other add-ins) to the top and place in the preheated oven for 15 minutes.

    You can adjust this based on how you like your eggs cooked – 15 minutes should produce cooked whites with runny yolks using large eggs.

  • Then add salt and pepper to taste, hot sauce if you’d like, and enjoy!
